Argentine red shrimp - 800g
What's on the table of those who love a refined, elegant and refined taste? Arbi Argentinian Shrimps, of course! The 800g packet is ideal for a dinner with friends or for families with children who want to spend an evening with the authentic flavour of the sea.
Tips for defrosting
Place the product, still frozen, in the refrigerator at a temperature of +4°C for a few hours.
Remove the product from the packet and hold under COLD running water for about 5-10 minutes.
Once defrosted, the product must not be re-frozen. It can be stored in the refrigerator and should be consumed within 24 hours.
Shrimp risotto enriched with pistachio pesto.
Ingredients for 4 people:
For the pesto: 80g of unsalted shelled pistachios, 150g of extra virgin olive oil, juice of one lemon wedge, 5 basil leaves, water to taste.
For the rice: 2 litres water, one 800g pack of Arbi shrimps, 320g Carnaroli rice, 2 shallots, half a glass of brandy, 6 black peppercorns, extra virgin olive oil to taste, salt to taste.
To prepare the pesto, put all ingredients in a container and blend with hand blender, adding water to obtain a creamy consistency.
Defrost the shrimp under cold running water, then clean by separating the flesh from the shell.
For the broth, sauté 1 chopped shallot, add the shells and black peppercorns to hot oil, cook for 5 minutes and deglaze with the brandy making it evaporate, then add the water and reduce by a quarter; strain the crustacean fumet and set aside.
In a saucepan, fry the other chopped shallot in olive oil, add the rice and toast it, then gradually pour on the hot crustacean fumet, evaporating as you go; towards the end add the prawns, half of which are diced, and finish cooking, leaving the rice slightly "al dente".
Turn off the heat, stir in the pesto and serve.
If wished, you can garnish with pistachios, chopped and toasted in a frying pan.
