Ingredients for 6 people: 1 pack of cod fillets g. 800, 3 cloves of garlic, 2 anchovy fillets, a small onion, chopped parsley, a cup of flour, extra virgin olive oil, salt, 500 g. of new potatoes.
Flour the cod fillets and sauté in hot oil on both sides. Drain, lightly salt and keep warm. Separately in a large frying pan, sauté the chopped garlic, onion, anchovies and parsley in three tablespoons of hot oil.
Add the potatoes and cook everything over very low heat for about 20 minutes. Place the fish fillets in the sauce with the potatoes. Add 1/2 glass of water and simmer for 15 minutes over low heat with a lid.
Before serving, season with salt and sprinkle with chopped parsley.
