It’s surprising to think of a red wine paired with fish; yet, served cool, it pairs with the dish with its spicy and balsamic notes of equal intensity. The flavor of octopus and the consistency of potatoes are completed by the wine’s proper structure and its fruity vein.

Ingredients
- 2 packs Arbi Octopus Ragù
- 4 medium/large potatoes
- 30g butter
- 2 shallots
- 2 sprigs of fresh oregano
- parsley to taste
- extra virgin olive oil to taste
- pepper and salt to taste
Preparation
- Wash and dry the potatoes thoroughly. Before slicing insert a toothpick from side to side, 1 cm from the base. This will help block the knife and create the characteristic accordion appearance without accidentally cutting right through the potatoes.
- Once this is complete, rinse the potatoes under running water to remove the starch, which would make the slices stick together.
- Melt the butter in a saucepan or in the microwave and brush over the potatoes, then season with a drizzle of extra virgin olive oil, salt, pepper, chopped oregano and chopped shallot, working this into the slits.
- Preheat the oven to 200°C, place the potatoes in a baking dish and bake for 60-70 minutes. When cooked, prepare the Octopus Ragù following the instructions and cooking times on the package.
- Once the potatoes are ready, serve with the ragù and a sprinkling of chopped parsley.
