Preparation

THE CHEF RECOMMENDS

  1. Boil the octopus in a pot of salted water for 30 minutes, then leave it to cool in the cooking water (it will remain very tender!).
  2. Cut it into pieces and transfer it to a bowl with 60 g of boiled cannellini beans, 2 sliced boiled potatoes, 10 cherry tomatoes cut in half and celery sticks.
  3. Separately, whisk together a little extra virgin olive oil, lemon juice and a pinch of salt and pepper, then season the mixture.
