SURIMI SALAD - Ingredients for 4 people: a 250g pack of surimi sticks, fennel, carrots, radishes, celery, parsley, extra virgin olive oil, 2 tablespoons of lemon juice, salt and pepper. Defrost the surimi, blanch them and cut into slices. Dress them with lemon juice, oil, salt and pepper and chopped parsley. Let stand for about half an hour. Julienne the fennel and carrots; slice the radishes and celery; add the surimi and their marinade, serve and enjoy your meal.
