Niçoise salad with Arbi Seafood Mix

Ingredients

  • a packet of Arbi Seafood Mix
  • 3 hard-boiled eggs
  • 1 yellow pepper
  • 1 red pepper
  • 12 anchovies
  • 800g long beans (Chinese beans)
  • Green olives
  • 4 tomatoes
  • 2 Tropea onions
  • salt and pepper to taste
  • balsamic vinegar and white wine vinegar or apple vinegar

Method

  • Prepare the Arbi Seafood Mix as indicated on the packet. In the meantime boil the green beans until tender, then let them cool.
  • Boil the eggs for about 13 minutes.
  • Wash and cut the other ingredients: julienne the Tropea onions, then leave them to soak in water and apple or white wine vinegar, the peppers into strips, the hard-boiled eggs in 4 wedges and the tomatoes diced.
  • Combine all the ingredients in a bowl, season with salt, pepper, balsamic vinegar. It's done!
