Arbi Shelled Mussels can be cooked in any way: with pasta or rice, as a base for seafood soups but also sautéed with garlic and parsley.
However you decide to cook them, they will always be a delight for the palate.
200 g of shelled mussels
1 small shallot
500 g tomato purée
2 garlic cloves
sugar to taste
bread to taste
pepper to taste
salt to taste
oil to taste
Method - Serves 4
Fry 2 cloves of garlic in a frying pan with 2 tablespoons of oil, then add the mussels already defrosted and cook for 2-3 min.
In another frying pan, sauté a pepper blended with the chopped shallot for 2 or 2 minutes, then add 500g of tomato puree, a teaspoon of sugar and salt and cook for 4-5 minutes.
Season with pepper.
Transfer everything to a bowl and let it cool, then add the mussels.
Serve the soup with cubes of toasted bread.
