Argentine red shrimp - 400g
Arbi Argentinian Shrimps, also known as Atlantic Shrimps, are one of the most prized species of shrimp. Typical of the southwestern part of the Atlantic Ocean, they have a unique flavour and texture. As a gourmet appetiser, fish first course or delicious main meal, they are just awaiting your creativity.
Let the shrimps defrost. In an earthenware pot with lid, gently cook the chopped leek with the garlic in 5 spoonfuls of oil.
Add the anchovy fillets, the peeled, diced potatoes and the wine.
Deglaze over high heat and cook for about ten minutes before adding the peeled, sliced tomato and saffron dissolved in a little hot fish broth. Season with salt.
Cook for 20 minutes, then add the shrimps and continue cooking for another 5-6 minutes.
Just before serving, sprinkle some lemon zest on the soup.
Serve with toasted bread. Enjoy!
