Cleaned octopus
Prince of seafood, octopus contains a bouquet of unique flavours that combine with any type of cuisine, whether one favouring simplicity, or distinguished for its complexity.

Ingredients
1 pack of octopus 500 g
60 g cannellini beans
2 potatoes
10 cherry tomatoes
celery
lemon to taste
pepper to taste
oil to taste
salt to taste
Method - Serves 4
Boil the octopus in a saucepan of salted water for 30 minutes, letting it cool in the cooking water (it will remain very tender!).
Cut into pieces and transfer to a bowl with 60 g of boiled cannellini beans, 2 sliced boiled potatoes, 10 halved cherry tomatoes and the celery in sticks.
Separately, beat together a little extra virgin olive oil, lemon juice and a pinch of salt and pepper, then season the octopus mixture.
